5 Questions With T. Colm O’Callaghan, VP of Trump International Hotel & Tower Chicago

1. What makes Trump International Chicago Haute?

Trump Chicago was designed to represent a new generation of style and luxury in worldwide hospitality, so it’s truly haute from the Riverwalk to the 89th floor Penthouse. 2. What is your favorite room/suite in the hotel?

All rooms that end in 00 have the best east-facing views. 2600 is a personal favorite, featuring beautiful furnishings, spacious layout, five-fixture bathroom with an imbedded TV in the mirror – a standard of every guestroom – and, most importantly, up-close views of the Wrigley Clock on the Tribune Tower, and the Chicago River.

3. For sushi, which restaurant would you recommend to your guests?

My favorite destination for fresh, innovative sushi in a stylish, vibrant atmosphere is right inside the Trump Chicago walls at Rebar, a chic lounge on the hotel’s mezzanine level. Our Sushi Chef Ismael Lucero presents an ever-evolving menu of Neo-Japanese fare, which guests feast on while enjoying panoramic views of the Chicago River.

Whether it’s a platter of fresh sushi and sashimi, a specialty item such as the Ebi Tostada, which infuses Mexican flavors into a Japanese-style fish salad, a classic makiroll or something more inventive like the Platano Macho – a soybean paper roll with sweet potato and banana tempura with baked unagi, chives, tobiko and a housemade banana unagi dressing – Chef Lucero brings a unique flavor profile to Rebar’s sushi program that pleases both sushi beginners and enthusiasts alike.

Rebar also offers a selection of 15 sakes, a well-edited list of fine wines and Champagnes, and an extensive “Liquid Kitchen” cocktail program, allowing guests to complement their sushi experience with a refreshing beverage.

4. Tell us about a perfect day in Chicago.      

Waking up in one of our lakeview suites is the best way to start any Chicago day. The views put a smile on everyone’s face and inspire exploration of the city’s architectural sites. After enjoying a freshly prepared breakfast from our organic-certified in-room dining menu, I’d head outside to walk along Michigan Avenue and window shop before boarding one of Wendella’s River Architecture Tours along the Chicago River, which is my favorite way to view and learn more about the buildings that make the city’s skyline world famous. After disembarking on the Trump Riverwalk, my family and I would walk over to Millennium Park to enjoy an outdoor music concert at the Harris Theater before dusk.

The day must end with dinner at Sixteen. Executive Chef Thomas Lents is exceeding the expectations of dining critics around the country with his progressive, French-inspired American cuisine, and the attentive service and stunning setting are unmatched in the city. Every dish is a must-try, but I particularly enjoy the Poached Langoustines with Chilled Heirloom Tomato Gazpacho with salad of avocado and cucumber pearls, tender basil tips, and shellfish essence, which appears on Chef Lents’ current a la carte menu.

5. What are some special amenities available at Trump International Chicago?

Every amenity at Trump Chicago was designed to anticipate guests’ needs, from our Trump Attache team to the variety of award-winning dining outlets. Most recently, we introduced two new Audi house cars as a complimentary amenity for guests staying in suite accommodations, allowing them to request chauffeured drop-offs to any destination within a 1.3-mile radius from Trump Chicago. Also, as a fitness enthusiast, I particularly appreciate the new Belkin charging stations at The Spa at Trump, which allow busy executives and on-the-go-travelers to fully charge their phones while achieving an invigorating workout. It’s also a good excuse to take a break from technology for an hour!
