Eden Rock – St Barths, an exclusive member of The Haute Hotel Network, is teaming up with Chef Jean-Georges Vongerichten to transform the hotel’s culinary character. Vongerichten and the hotel’s executive Chef Anne- Cécile Degenne, are melding their elite professional skills together to enhance the already incredible culinary experience at this posh palace. The two new menus will be featured at the hotel’s two restaurants, On the Rocks and Sand Bar, and are scheduled for debut just in time for the hotel’s seasonal recommencement in October. In addition to Vongerichten, the entire Eden Rock culinary team consisting of Executive Chef Anne Cécile Degenne, Food & Beverage Director Fabien Mandigou and Restaurant Manager Luc Lanza, were all instrumental in the design and execution of this project.
On the Rocks is the hotel’s sultry evening venue that sits overlooking the water, allowing guests to dine while gazing out onto the beautiful horizon.The new menu at this restaurant has been inspired by Vongerichten’s long-time interest in Asian street food. Dishes such as local lobster with toasted garlic drawn butter, basil, lemon and Asian coleslaw will be paired with new organic and Alsatian wines. Vongerichten’s signature cocktails made with fresh fruits and spices such as ginger, thyme, and yuzu will also grace the tables of this fine venue.
The hotel’s equally haute lunch spot, Sand Bar, is the place to escape for a midday drink or to cool off from a day in the sun. This menu was inspired by Vongerichten’s ABC Kitchen concept and will feature yummy salads such as a roasted carrot salad with avocado and citrus dressing. If you’re in the mood for something heartier, look forward to the whole-wheat pizza topped with black truffle and fontina or smoked salmon.
